When I make a Tea Loaf the bread part comes out dry like cornbread ….?
Is this how its supposed to be or how else do I make it. In my recipe this is what I did:
Ingredients
3/4 lb (350 gm) mixed fruit
7oz (200 gm) soft brown sugar
10 oz (270 gm) self raising flour
3/4 pint (425 ml) freshly made tea
2 eggs
Pinch of salt
Method
Make the tea and then pour over the fruit and sugar and leave over night. Next day, mix in the flour and the beaten eggs to the soaked fruit and sugar and cook in a 2lb greased, non-stick bread tin. This is a 9×5 inch loaf tin. Cook for approximately 1.5 hours at 300ºF, (150ºC). Cool on a rack and served sliced and buttered.
I did this and it comes out dry-ish. HELP!!!!!!!!
Sounds like the cooking time is off. Try cooking it for 45 minutes and start testing with a toothpick from there on out. Once the toothpick comes out clean, it will be done. I know if it’s overcooked, it will be dry. I noticed your recipe doesn’t have any oil or butter in it but I’m assuming the mixed fruit is to take the place of the oil or butter? For a fat-free cake? If your intent is not to make a fat-free cake, I’d add 1/4 c to 1/3 cup oil just to see if it helps.
