£8 a week food recipe ideas?
help, after unexpected bill i am left with only £8 per week for the next 3 weeks to spend on food. I need some cheap reasonably healthy recipes(not too fussy about healthy 3 weeks won’t kill me) that will keep me full, I cannot leave the house so I need to have a shopping list for my support worker tomorrow. I can spend a little of the money upfront to buy basics with (eg. £15 the first week and the rest split between the next 2 weeks) and I have a little in my house already (listed below) any one have any ideas of what to put on my list for support worker.
In my cupboards
3 frozen salmon fillets
3 frozen chicken breasts
frozen peas
1/2 pint milk
50g chedder
a bit of butter
half iceberg lettuce
stock cubes
herbs and spices
flour (plain)
flour (bread)
6 sachets yeast
pasta
baking powder
box of ready brek
honey
jam
oil
sugar
tea bags
onion
4 garlic cloves
2 bananas

Rice, kidney beans ( beans and rice, or in salads for protein) ,couscous, canned tomatoes (for pasta sauce), eggs ( for omlettes),instant mashed potatoes… Search the local grocery shops online to see whats on sale and make your list brand specific. If you have any decent dollar / pound shops in your area that have grocery sections, you might want to try there also. There’s one by me that even has a frozen section with steaks in it!
Here’s a really easy and inexpensive potato and corn chowder recipe:
Potato and Corn Chowder
1 Tbsp Butter
1/3 cup Chopped Onion
1 Bouillon Cube (Knorr-in Asian Markets usually or sub another flavor)
1 Quart Water
1 Bag Instant Potatoes (I like the Roasted Garlic but use what you like)
1 Can Creamed Corn
Milk, cream, or half and half
Salt and pepper
Saute the Onion in the Butter until Soft. Add the Water and the Bouillon Cube and bring to a boil. Remove from heat and Whisk in just enough of the Instant Potatoes to get a cake or muffin batter consistency. Add creamed corn, then Add Milk or Cream until you have thinned it to desired consistency. Taste for Salt (usually doesn’t need any because of the salt in the bouillon) and add pepper if desired.
