How to brew but not stew tea?
I’ve recently switched from teabags to loose leaf tea : Assam and Rooibos. I let the pot stand for 5 minutes or so and the result is an obnoxious brew reminiscent of past tea urns. The tea tastes totally stewed. Should I pour out within a minute ? Or use more water ? Or … any tips appreciated.
My wife doesn’t like her tea very strong so I use 1 teaspoon for 2 8oz mugs. When I make it for me, I use 1 tsp for 1 mug. You may be using too much tea for your tastes. Also Rooibos & Assam require boiling water (many teas should be steeped @ 160-185), so make sure it’s hot enough. Preheat your pot with boiling water, empty, place tea leaves, add boiling water & steep.
You can brew to taste. Stop anywhere between 2-6 minutes.
Lastly; If you’re using a proper teapot with a diffusion basket, don’t use the basket (tea needs room & it expands when wet). I pour my tea through the diffusion basket into the cup.
