Is there a difference in flavor between and herbal extract and an infusion/tea?
I am trying to concentrate the flavors of some herbs and spices for use in a candy recipe. I do not have weeks or months to wait for an alcohol based extract, so I want to know if an infusion or tea would provide the same strength of flavor that an extract would. I cannot use much liquid for the recipe, so I need to get good flavor with minimal liquid.
Is an infusion the same strength, drop for drop, as an extract?
Will the flavor be impaired by reducing the infusion?
Will I get a different flavor from infusion than I would an extract?
Do some of these herbs and spices respond differently to oil, boiling water, or alcohol?
The herbs I am using are anise, coriander, mint, eucalyptus, lavender, cardamom, and caraway. I will probably be making each extract individually.
Extracts are much more potent in flavor. So if you are needed a mint extract, then using a liquid infused with mint is not going to be near as strong and will require much more to get the needed flavor, thus adding a lot more liquid to your recipe.
And yes they will react differently with different liquids based on their oil content.
