can a pudding containing this much eggs be cooked on the stove instead?
don’t have any pan’s that can fit for the recipe.
and so i was wondering if i could just cook it on the stove the same way i do with oatmeal or custard.
here’s the recipe. let me know if it’s possible ;
((COFFEE PUDDING))
INGREDIENTS;
* 5-ounce brewed strong coffee
* 3/4 cup granulated sugar
* 4 large whole eggs
* 1 pint reduced fat milk
* Pinch of salt.
* Two baking pans, one larger than the other
Step 1
In a saucepan, bring milk to a boil then leave it to cool. Beat four whole eggs and 5-ounce granular sugar together, add coffee then the milk and salt.
Step 2
Strain mixture into a smaller baking pan of the two. Place this filled baking pan in the larger baking pan. Fill the large pan with boiling water half way up.
Step 3
Bake in a 325 degrees F oven until mixture is firm and set; check frequently. Remove from heat and let cool for a few minutes. Divide into individual portions then spoon in cups/mugs or bowls.

This is really a custard recipe and not pudding . Why they are referring to it as pudding I do not understand .However if you wish to do it on the stove it is highly possible with a few changes is all . The texture will not be the same as if you did it in the oven with the water bath , but here is the skinny on doing it on top of the stove :
1 ) mix the sugar with 2 – 3 tsps. of a starch ( cornstarch , arrow root , flour or even rice flour )
2 ) now beat in the eggs with the sugar mix , doing this all in a saucepan since I forgot to start it that way : appologies
3 ) omit the salt , it’s unnecessary
4 ) whisk in the coffee and turn on to med. low heat and start whisking .
5 ) when blended slowly add milk , whisking the whole time . It will slowly start to thicken as it heats . Do Not stop whisking or you will have lumps . When silken and smooth turn off heat and cool .
P.S. this is a great cheat for a pie filling with an already baked crust .LOL
