Is it ok to make gluten free bread in the same mixer as regular breads?
I work at a coffee shop and we make our own breads (zuchinni, pumpkin, banana) and now we are looking into a gluten-free option.
At the moment, we have one KitchenAid for all the baking and I was wondering if we need to get another one strictly for the gluten-free baking or is it OK to use the same one?
What are the “rules” regarding this kind of baking and are there certain health code type things I need to know about?
Also, is there an issue with “cross-contamination”?

As long as the mixer bowl, paddles, dough hooks, and other tools are properly cleaned between batches, there is no chance of cross contamination. Unless you need to speed the process so you can make more than one type of bread at the same time, you can get along with a single mixer just fine.
