Cooking with cardamon?
Does anyone have any tips for using cardomon pods? I recently purchased a jar of “green” pods. They smell heavenly, but I’m not quite sure how to use them. I’ve been told to grind them, but do I remove the pod/shell or grind that with the seed? Toast first?? Can I use a coffee grinder??
Like bay leaves they impart a nice flavour ground green cardamon as oppose to the larger black one is more citrus and floral in foods, I grind then for use in curry powders and in baking ( a big item in Swedish baked goods), but you can crack them and place with bay leaves, peppercorns, thyme and garlic in small cheesecloth sachets/bags as a “Bouquet Garnis” in soups and stews, this way you get the flavour and can fish them out in the end, in Indian sweets and desserts they are used ground for burfi and laddo a fudge like sweet,also n the syrup for Gulab Jaman, a fried dough ball soaked in a flavoured sugar syrup and in Rasa Mali a milk pudding like dish, sort of like cottage cheese balls with a sweet cream sauce, they scent the cheese and milk sauce with them.
