what size should I grind my coffee?

Flat-bottom paper filter manual (NOT machine) drip. What size grind is right?
please specify how you brew your coffee. Flat bottom or cone? Paper or gold mesh? Manual or automatic? Drip or press?
I did some research and found that cone or paper filters should use finer grinds and flat bottom or gold mesh should use coarser grinds. Does manual or automatic make a difference?

For paper drip brewed coffee, a medium grind is best. Too fine a grind will clog the pores of the paper but also end up with over extracted (bitter) coffee. The reason mesh filters need a coarser grind is that the coffee could fall through the holes and end up in the coffee where not only will they add grit, but they will keep extracting and add bitterness.

Every grinder is different, but so are the beans; you’ll have to find the exact setting on your grinder that works. I have a Rancillio grinder that has over 80 settings. Once I found which setting worked best for different brewing method (I have seven) I marked each one.

Out of all my brewing methods my favorite is Turkish coffee. The only problem is that it’s the slowest way I know to make coffee so I don’t often have time to make it. My most common ways to make coffee are:
1) Stove-top moka pot
2) French press
3) Chemex manual drip coffee maker. I use a manual drip since I can control the water temp better (most auto-drips never get hot enough, missing the right temp by as much as 35 degrees F). It’s also much easier to clean. Paper filters remove the oils that give it the rich taste but also increase the bad cholesterol, so people with cholesterol problems may want to use paper for their health.

On the weekends, I’ll sometimes use my Cafetino balance brewer. It tastes similar to French press (but milder) and it’s a bit of a show making the coffee. I actually have the water heating right now in it.
