Can I use instant dry yeast on a homemade fruit wine insted of active yeast?
I’m making one for my biochemistry project.
And should I dissolve the instant dry yeast just like the active yeast?
Yes, you can……. and it won’t really matter at all unless you are planning on drinking your wine:
*You will produce “off” flavors (i.e., there is no telling how bad this could taste, but it might end up OK, too)
*Typical temperature guides for fermentation will no longer apply (like the first cautionary, this would be of more concern to a homebrewer who intends to drink the final product)
*Your wine will likely not be as strong as if you had actually used a wine yeast (wine yeast survives longer than other varieties of yeast thereby producing the higher natural alcohol content of wine)
*You may also end up producing small amounts of other types of alcohol in your wine, i.e., the methyl alcohol content of your wine may be slightly higher than normal. While methyl alchohol -is- poisonous (it is the stuff in moonshine that can cause blindness) you will not be able to produce enough of it to hurt yourself in the winemaking process. However, your wine may give you a nastier hangover than it would otherwise if you drink it.
Winemaking yeast should not cost you more than $5 at your local homebrewery supply store (or online) and you do not need to be 21 to buy it. If you have time and want to drink your wine I would recommend it!
