Help! Cake not baking right!?

Made a Cinnamon Coffee Cake. Followed directions and even with putting a toothpick in to see if it was done it STILL fell apart on me. What the heck am I doing wrong? I put it in a bunt cake pan…even cooked it an extra 10 minutes. Recipe calls for cooking it at 350 for 20 minutes then cooking it for 40 minutes at 325. Ingredients are cake mix, two packages of instant pudding, cup of veggie oil, cup of water, 4 eggs. Put a layer of brown sugar, cinnamon, and crushed walnuts in the middle and on top. Its a mess. Any ideas? I waited 30 minutes before trying to get it out of the bunt pan, put a knife to the sides in case anything stuck. Thanks for the input.

Sorry to hear that you have had so many problems with your baking, There could be a several factors involved as baking requires exact quantities.

Firstly, are you preheating your oven? It must be at the correct temperature before you put in your pan with the cake mix. How are you putting together your ingredients? Generally it is better to add the eggs one at a time and mixing well to incorporate them into the mixture, as this helps to prevent any splitting. The recipe ingredients quoted appears like the cake mix contains alot of liquid, perhaps this could be a potential problem. Try not to put too much of the brown sugar layer into the middle as this might cause the structure of the cake to become too loose. I would also advise to leave the cake to cool in the pan completely before turning it out as the edges will firm up much more and make it easier to remove. Hope this helps.
