Why are my coffee beans collecting moisture inside a ceramic, supposedly air-tight container?

I bought 2 lbs of quality coffee at a good price, vacuum-sealed 7 quarts in bags, put them in the freezer, inside a paper bag, and then put the remaining quart of beans inside one of those black ceramic latched things that go on the kitchen counter. That was two days ago. Today I opened the container to get out a couple scoops and the beans didn’t smell as good and the coffee didn’t taste as good. The container was dry, but the beans had water droplets on them today when I opened the container. What gives?

Are you sure it’s not oil instead of water?
Coffee beans, once roasted (especially a dark roast) allow the coffee’s natural oils to migrate to the beans surface. This is usually a ‘wet’ appearance and is in no way harmful to the usefulness of the bean. The darker the roast the more oil will usually appear. Grind them as usual and brew a pot of coffee….Honest, this is natural…I’ve been roasting my own coffee beans for over 10 years now…
also the flavor of coffee beans actual change as they age.
If your coffee is not tasting as good as they had been, I suspect that you may have old beans and the oil is starting to turn rancid (coffee is over 5 to 6 months old, or past the roasted date). BUT if this is freshly roasted (And you know the roast date) something may have been inside the container that contaminated the beans.
