
How much gelatin is required to set a liquid that’s 20% alcohol by volume?
I must assume that since alcohol is thinner than water, it must require more gelatin to get it to set properly, right? I need 3 pouches of gelatin to set 6 cups of “liquid”, but since my “liquid” is 20% abv, how much gelatin should I use to ensure it sets up well?
Here’s what I’m doing:
Brew 3 cups strong French Roast coffee in percolator… boil-in gelatin.
Stir in 3 cups fine vodka, & set in individual serving dishes.
Serve with a drizzle of sweetened cream.

As with Jello shots the alcoholic volume does not affect the gelatin’s setting properties, it is the liquid, for that amount you want 2 1/2 teaspoons of gelatin soften in a 1/4 cup of cold water, then add to the warmish, not boiling coffee and liquor, stirred to make sure it has dissolved, and then poured into your serving vessels, leave the cream for tomorrow or add some in the mix now and just add a full 3 teaspoons of gelatin.
