What can I do with an abundance of canned beans?
I’m not sure how I managed to do it, but I have over 10 cans of different types of beans: light and dark kidney, great northern, and cannellini. Normally I would just make a bunch of chili and call it a day, but it’s 80 degrees and humid in the Great Lakes. Help!
Take a mixture of colors from your stash and make a bean salad. I take a sweet onion and do thin strips, cut some celery slices, real thin and add a mixture of rinsed and drained beans. Just made some last night with garbanzo, two different kidney beans and some black beans but any work. Then dress with your favorite oil and vinegar dressing with a bit of sugar added for a sweet/sour taste. I usually add a little more vinegar too. You can also put sweet peppers in for a bit of color.
Stir the whole thing together gently and let chill for a couple hours before serving.
High in fiber and other wonderful nutrients, the olive oil brings some of those great Omega 3 fatty acids along too! Keeps really well in the fridge for a week at least. Just be sure to stir it up before serving.
It’s hot and humid here in N. Cental PA too! We did a cold supper last night of egg salad, tuna salad, melon, cottage cheese, bean salad, pickled eggs and cold veggies. Thinking chicken on the grill for dinner tonight. I’ll put the chicken on, run over to the neighbor’s pool, dunk myself and come back and cook! The neighbor does the same thing……..LOL
